How recipe scaling works (and when not to trust it)

Doubling a recipe is arithmetic. Doubling it well is arithmetic plus judgment. Here’s where the line sits.

What scales exactly

Quantities. When you change servings on a card, every amount — mixed numbers like 2-2/3, plain fractions, ranges like 4–6 tablespoons, and parenthetical metric weights — is multiplied precisely and then rounded to fractions a human can actually measure: halves, thirds, quarters, sixths, eighths. Metric weights round to sensible grams. A 1.5× scale of 2-2/3 cups is exactly 4 cups; 330 g becomes 495 g.

What rounds, and why

Kitchens don’t have 0.4375-cup measures. Rounding to the nearest practical fraction introduces tiny deviations — under a couple percent — which is far inside the tolerance of nearly all cooking. The one place to stay alert is highly precise baking at large scale-ups, where small rounding on leaveners compounds. Scaling a bread formula 4×? Weigh in grams and trust the metric numbers.

What deliberately never scales

Times, temperatures, and pan sizes. A double batch of banana bread in the same loaf pan is a different, taller object that bakes differently; a doubled cookie recipe still bakes at the same 375°F for the same 10 minutes per sheet — you just fill more sheets. Automatic time scaling would be confidently wrong, so cards keep the original times and leave vessel decisions to you. Rules of thumb: same-size portions mean same bake time regardless of batch count; bigger single vessels mean lower-and-longer, checked early.

The awkward cases

Eggs at 0.75× become 1-1/2 eggs — the card shows the honest fraction (beat one egg, use half). “Salt to taste” never needed math anyway. And spices scale linearly on paper but not always on the palate at big multiples; taste at 75% and adjust upward.
